1 Sesame bagel XL
100g beetroot, cooked, diced
2 small sweet oranges, filleted
1 tablespoon of pine nuts
orange zest, mint leaves
For the dressing:
2 tablespoons of nut oil
1 tablespoon of fresh orange juice
2 tablespoons of white wine vinegar
Slice the bagel and put margarine on both parts of the bagel.
Mix beetroot with orange filets and pine nuts.
For the dressing: Mix Nut oil, orange juice and vinegar, add salt and pepper.
Mix dressing and vegetables / fruits carefully. Put it on both bagel slices and decorate with mint leaves and orange zest before serving.
